Mission Statement
The company’s goal is to provide our guests with a dining experience that is both fun and affordable.
Our first responsibility is to the financial well being of the restaurant and its shareholders. We will
meet this goal by; 1) serving our guests only the highest quality food and ingredients 2) maintaining
a very clean restaurant 3) employing an expedient staff willing to go the extra mile to make sure
each and every customer is well taken care of in a fun and festive atmosphere and 4) excellence in
attitude, fairness, understanding, and generosity between management, staff, customers, and
vendors. Awareness of all these factors will provide a sense of purpose and results that meet our
basic financial goals.

Future Plans
Once our first restaurant opens we will continue to look for and pursue possible sights for new or
possible remodel locations in order to fulfill our goal of 3-5 franchise Quaker Steak and Lube
restaurants in the next three years. Depending on the success of the first location, we will determine
how to best finance and build the second. Our goal is to have 3-5 restaurants with sales averaging $5,000,000 per store and net profits in the $500,000 to $600,000 average range per unit.

Industry Analysis

Although the restaurant industry is very competitive, the lifestyle changes created by modern living
continue to fuel its steady growth. More and more people have less time and desire to cook for
themselves.

The Restaurant Industry Today
The food service business accounts for over $240 billion annually in sales divided up among over
400,000 restaurants. The industry is the largest employer next to the government, with over 12.2
million employed. American consumers will spend 47% of their food dollar in the restaurant
community in 2005. The typical restaurant has 1 location and less that $500,000 in annual revenue,
although a few have revenue up to $5,000,000.
Demand is largely driven by consumer income because a restaurant meal is more expensive than
one home-cooked. The profitability of an individual restaurant depends heavily on volume because
of high fixed costs. There are few economies of scale, except that chains, such as ours, can buy raw
materials in bulk and can leverage their marketing costs. Small restaurant companies can readily
compete against large ones by offering superior food or service. Annual revenue per employee is
about the same for large or small restaurants, about $35,000.

Future Trends & Strategic Opportunities
Restaurant-industry sales are forecasted to equal 4% of the U.S. gross domestic product. Ron Paul,
principle with Chicago-based restaurant research firm of Technomics Inc., sees wing restaurants as
a separate and lucrative niche between fast food and casual chains. “It’s differentiated, which is one
of the reasons it’s finding success,” said Mr. Paul. “It’s a valid alternative to the Applebee’s and
TGIFridays.”
The Quaker Steak and Lube chain is expanding aggressively. They plan to add 40 new franchises in
the next 5 years in states like New York, Colorado, South Carolina, North Carolina, Indiana, Virginia,
Tennessee, Kentucky, Wisconsin, Florida and continued growth in Pennsylvania and Ohio.

Products & Related Services

Quaker Steak and Lube offers a diverse menu of food and beverages with a distinctive image. The
décor has a racing motor sports theme and our Motto is “There is always something happening at
the Lube!” We will have motorcycle and classic car nights as well as bands and DJ’s throughout the
month for guests’ entertainment. The layout of the restaurant is 9,400 square feet with 350+ seating
capacity, two bars including a patio with bar and seating. We will have high definition flat large
screen TV’s that show sporting events as well as smaller high definition flat screen TV’s throughout
the restaurant. Full service dining is available at tables, booths and at both bars. You may also order
food to go from inside the restaurant or order ahead of time and pick your food up at our drive up
“Wingo” window.

The Menu
The Quaker Steak and Lube menu (see enclosed) features award winning buffalo style chicken wing
with 19 flavors and moderately priced offerings of steak, chicken, burgers, ribs, seafood, soups,
salads and appetizers. Average check is $14 to $16. Our goal is to create a fun, festive, familyfriendly
atmosphere that makes people want to return to again and again.

Production
Our entire menu is prepared on site and we use only the best quality ingredients in every meal we
serve. We use fresh chicken wings delivered three times a week cooked in over size fryers and
sauced with your choice of our award winning sauces. We have a wide variety of comfort food to suit
almost all tastes including steaks cooked to order along with our tender baby back ribs. We can
tempt you with several varieties of half pound “Lube” burgers along with our boneless wings and
several choices of chef salads to suit all tastes. Along with our extensive menu we offer many
appetizers such as our “Ontenna” onion rings served on a car antenna. We also offer a full kids
menu sure to please the most discriminating youngster.

Service
The word service is synonymous with the Lube. We strive to bring exemplary service to every
customer as we understand that they can spend their hard earned money at any number of
establishments. From the warm greeting as they walk in the door to the time we say goodbye and
thank them for joining us we want their experience with us to be one to be remembered. They key to
success in our business is having our customers as our greatest advertisement and serving them
well each and every time is our goal and commitment.

Future Opportunities
Once we have established our main restaurant locations in our target demographic, we will look at
the possibility of opening smaller satellite restaurants that offer the classic Lube atmosphere in a
scaled down 2,000 to 4,000 square foot units offering an abbreviated menu and utilizing our “Wingo”
window. We will also look into purchasing a concession trailer that we can use to book catering
opportunities as well as state and county fairs and events.
